Prime Hospitality Group Announces New Chief Operating Officer

Indianapolis, February 27, 2024 — Prime Hospitality Group (PHG) has named José Laboy Chief Operating Officer (COO) to develop, direct and oversee operations for its Ruth’s Chris Steak Houses, Exchange whiskey and cocktail bars, Bin 23 Bistro and hotel F&B operations.

Laboy comes to PHG with more than 30 years of experience in the hospitality industry. He has spent time working both locally and internationally, ensuring great guest experiences and furthering brand initiatives.

During his career, Laboy has held multiple senior-level executive positions with Darden and Darden International. He brings years of leadership skills to PHG after winning Director of the Year four times for being the highest performing director of operations within the organization.

As an operations expert, Laboy specializes in increasing efficiencies, developing culinary and service initiatives, producing strong profitability, creating a strong bench of talent and spurring unit growth across the U.S. Most recently, he served as Senior Vice President of Operations for Cheddar’ Scratch Kitchen, overseeing 94 restaurants and $350 million of annual revenue.
